look for 77 xlcr parts. they did a nice job at the factory back then. some stuff is available in the aftermarket. don't listen to anyone to dissuade you; the sportster is a good platform for this conversion.

You can't. A Harley will never handle, ride or perform like a true cafe bike (Buell included).
there are several companys offering cafe body kits and low bars etc for sportys, theres even one that make them look like a vincent black shadow from the 1950's
harley's are for girls. try a Yamaha R1, you will be surprised !

Not much really, most cafes wont go faster than about 0mph, and even a Harley could run faster than that.
